Tater Stickers Recipe

Ingredients

4-5 nice size potatoes make 12 Tater Stickers
Mozzarella Cheese
Bacon Bits
Sour Cream, optional

Instructions

Preheat the oven to 350 degrees Fahrenheit.

Scrub the potatoes clean and pierce them with a fork. This allows steam to escape and prevents them from exploding in the microwave.

Microwave the potatoes on high for 10 minutes.

Carefully remove the potatoes from the microwave and peel off the skins. If the skins don’t come off easily, return the potatoes to the microwave for another minute or two.

In a large bowl, mash the potatoes until smooth. Add a few drops of milk, a pat of butter, and a generous handful of shredded mozzarella cheese. Fold in the bacon bits until evenly distributed.

Line a cupcake tin with cupcake wrappers. Fill each wrapper about 3/4 full with the mashed potato mixture.

Top each cupcake with an additional sprinkle of mozzarella cheese and some bacon bits.
