Making these mashed potato cupcakes is surprisingly simple. The recipe requires minimal ingredients and comes together quickly, making it perfect for busy weeknights or when you need a last-minute appetizer.
Tater Stickers Recipe
Ingredients
4-5 nice size potatoes make 12 Tater Stickers
Mozzarella Cheese
Bacon Bits
Sour Cream, optional
Instructions
Preheat the oven to 350 degrees Fahrenheit.
Scrub the potatoes clean and pierce them with a fork. This allows steam to escape and prevents them from exploding in the microwave.
Microwave the potatoes on high for 10 minutes.
Carefully remove the potatoes from the microwave and peel off the skins. If the skins don’t come off easily, return the potatoes to the microwave for another minute or two.
In a large bowl, mash the potatoes until smooth. Add a few drops of milk, a pat of butter, and a generous handful of shredded mozzarella cheese. Fold in the bacon bits until evenly distributed.
Line a cupcake tin with cupcake wrappers. Fill each wrapper about 3/4 full with the mashed potato mixture.
Top each cupcake with an additional sprinkle of mozzarella cheese and some bacon bits.
Bake the mashed potato cupcakes for 12 minutes, or until the cheese is melted and golden brown.
Serve with a dollop of sour cream on top.

The next time I’m stuck for what to do with potatoes, I’ll be trying this one! I have come to the conclusion that I just cannot cook tasty mashed potatoes that are “healthy” so why not throw in a little of all the stuff we doctor the potatoes with anyway? 😉
