Hi everyone! I hope your summer is going great. I’m Shannah, from Just Us Four, and I am excited to be back again this month sharing a new recipe with you. Right now, kale is one of the hottest recipe ingredients.  The bags come with so much kale in them that I find I need to come up with different ways to use it. I personally love it and use it in TONS for stuff from crostini to smoothies to dips. My newest recipe was pasta with kale pesto.

Pasta with Kale Pesto

Pesto is adds such a vibrancy to pasta and is so perfect for summer. This one replaces the traditional basil with kale and pine nuts with almonds. The result is delicious.

Kale Almond Pesto

Making this dish is so simple. Once you make the pesto {recipe below}, you simply add some to your favorite cooked pasta. I used linguine with mine but pretty much any shape would work.

Ingredients

  • 2 cloves garlic peeled
  • 2 cups kale leaves large stems removed
  • 1/2 cup basil leaves
  • 1 tsp salt
  • 1 Tbsp lemon juice
  • 1/4 cup sliced almonds
  • 3 Tbsp olive oil
  • 1/2 cup grated Parmesan

Instructions

  • Add garlic cloves to food processor and pulse until finely chopped. Add kale through almonds and turn food processor on. With the processor running, pour olive oil in. Add Parmesan and pulse to combine.
  • Serve with hot pasta.
