Hi everyone it’s me, Rosemary, from An Italian in my kitchen. This week I would like to share with you a delicious bean soup. For me, one of the best comfort foods is soup and it is also perfect for a cold evening supper. Even here in Italy it is starting to cool down, the days are still warm enough, but the evenings are quite chilly.  This black bean soup has become a winter evening favourite of ours.  It is so delicious, loaded with fresh vegetables and a tasty tomato soup base. What is there not to like?

I like using as many fresh ingredients as possible in all my recipes and this one is no different. I recently discovered the amazing taste of black beans when I visited my family in Canada and I am lucky enough to have discovered that they are sold in my local grocery store here in Italy.  So black beans will be on my table for a while.

I love making soups in the winter.  I love the wonderful smells wafting through the house and they are so easy to put together. Just leave to simmer on the stove for an hour or so, serve with a crusty bread, some cheese and dinner is ready!  Enjoy!

Black Bean Soup

A delicious black bean and vegetable soup.

Ingredients

  • 1 cup dried black beans soak beans covered for 8-10 hours
  • 2 tablespoons olive oil
  • 2 stalks celery diced
  • 1 onion diced
  • 3 carrots diced
  • 1 cup tomato puree
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • dash thyme
  • 1/2 teaspoon salt
  • hot pepper flakes if desired
  • 4 cups water

Instructions

  • In a large pot add all the ingredients,stirring to combine and bring to a boil, then simmer almost covered for approximately 1 - 1 1/2 hours or until black beans are tender.
