Hi! I’m Nikole, busy mother of 4 who loves to bake. I’m a simple baker. For me, the easier the better. These Thin Mint Cupcakes that I’m going to share today were inspired by Thin Mint Girl Scout cookies. My daughter, who is a Girl Scout, was sorting the cookie orders and I thought – “wouldn’t it be great to make that cookie flavor last longer, after they all had been eaten?!” I mean, Thin Mint’s do seem to be a fav of lots of people!

Girl Scout Thin Mint CupcakesWith that thought in mind, we took our favorite cookie flavor and designed a cupcake! We started with the Girl Scout Thin Mint cookie and of course my 8 year old daughter, Melanie, assisted. Don’t be intimidated – I promise this cupcake is easy to bake! It starts with a boxed cake mix so it doesn’t get much easier!
