Guess what my little sis and I decided to do this Summer? We’re going to do a Tough Mudder in June! A Tough Mudder is a 10-12 mile run/obstacle course challenge. I am so excited! I already work out with a trainer twice a week, but I’m going to bump up my training a bit more so that I can really focus on my strength. One thing that I always lack is protein. Plus, working out as hard as I’ve been I need all the energy I can get. Which is why I made these Oatmeal Peanut Butter Bites with added Whey Protein. I can pop one or two after a workout, along with a glass of water and be good to go.
These no-bake 5 ingredient Oatmeal Peanut Butter Bites take about 5-10 minutes to make and are perfect bite-size snacks for on the go.
Ingredients:
1 1/2 cups Old Fashioned Oats
1/2 cup Low-Fat Peanut Butter
1/3 cup Pure Maple Syrup
1/3 cup Dark Chocolate Chips
2 Scoops Whey Protein (I use Cabot Whey Protein)
Milk Chocolate (optional)
Cinnamon (optional) – I’ve started adding 2 teaspoons of cinnamon to my oatmeal energy bites as it is a natural metabolism booster.
Directions:
Mix oats, peanut butter, maple syrup, chocolate chips, cinnamon and whey protein in a large bowl.
Roll into 1″ balls, making between 16-20 bites. Refrigerate for 30 minutes.
If you want to make these a bit more of a sweet treat, you can cover the balls in milk chocolate. Pour an 8 oz bag of milk chocolate chips into a microwaveable bowl. Heat in microwave for 1 minute. Take out and stir. Place back in microwave for 30 second bursts until completely melted. Place an oatmeal bite into the melted chocolate, cover completely and place onto a lined cookie sheet. Once all bites are dipped in chocolate, place in fridge until chocolate hardens.
Store in air tight container.
