Happy October! Wait…October?! How did that happen?! Time really needs to stop. Before we know it, it will be Christmas. Let’s stick with October for now though. I’m Shannah from the blog Just Us Four and I’m here to share with you a quick and easy recipe. Cajun Beans and Rice makes such a fantastic meal as the weather starts to cool and this recipe is both easy and delicious.
I made my Cajun Beans and Rice in one pot using Minute rice. If you use a long grain rice, I would suggest partially cooking it separately before adding it to the recipe. Either way, you are guaranteed to have a dinner that everyone enjoys.
INGREDIENTS
2 cups Minute Rice
2 Tbsp butter
2 cloves garlic, minced
1 jalapeno, minced
1 onion, finely chopped
1 green pepper, finely chopped
1 lb smoked sausage, sliced
1 can black beans, rinsed and drained
1 1/2 cup chicken broth
1 tbsp Cajun seasoning
DIRECTIONS
Melt butter in pan over medium heat. Add garlic, onion and bell pepper. Cook for 4-5 minutes or until vegetables begin to soften. Add sausage and cook for 3-4 minutes.
Reduce heat to low and add beans, broth and seasoning. Cook for 10 minutes.
Stir in rice and cook for an additional 5-10 minutes and most of the liquid is absorbed.
