Campfire Cheesy Twice Baked Potato is one of our very favorite side dishes to cook while camping. I HAVE to share this so others that can make them too, because honestly, they are just too good to miss out on! And a big shout out to my sister-in-law for introducing this recipe to me.
Campfire Cheesy Twice Baked Potatos

INGREDIENTS
Russet Potatoes
Sour Cream
Butter
Mozzarella Cheese
Bacon Bits

DIRECTIONS:
Cut large potatoes in half lengthwise
Add a bit of butter and wrap in tin foil
Place wrapped potatoes over the campfire (or on a grill) but not directly in the flame
Rotate every 10 minutes or so
Cook until tender (usually takes about 30-45 minutes)
To test if done: with something to protect your hands, or using tongs, squeeze the potato, if it feels soft and your finger leaves an indentation, it is ready
Carefully remove from the fire.
Unwrap each potato
Scoop the innards into a mixing bowl, leaving the skins and a small rim of potato intact
Be careful, the potatoes are hot!

Mix several handfuls of mozzarella cheese, bacon bits and a couple of dollops of sour cream into the bowl of potatoes, mashing as you go
Refill the mixture into each potato skin
Add a topping of cheese and bacon bits
Rewrap the potatoes and place back on the fire for another 10-15 minutes or until cheese is melted and potato is warmed through
