I learned how to make homemade ice cream cakes years ago. They are so simple and almost everyone loves them! They’re easy to customize and decorate and taste delicious every time! Seriously, a DIY ice cream cake is super easy and anyone can make it, promise! They’re perfect for birthdays or any other celebration and can be pre-made several days in advance, so no need to rush! Keep reading for a delicious homemade ice cream cake recipe!
How to Make an Ice Cream Cake at Home
INGREDIENTS:
(Two) 1/2 Gallon Ice Cream
Brownies – homemade or store-bought
Chocolate Syrup
Oreo Cookies
Cool Whip
DIRECTIONS:
Set ice cream out about 5-10 minutes before starting.
In a 10″ springform pan, press a layer of ice cream into the bottom of the pan.
Sprinkle broken up brownie and crushed Oreos over the top of the layer. (I’ve also used toffee bit instead of Oreo, which is my favorite!)
Zig zag chocolate syrup over the brownies and Oreos.
If the ice cream is starting to get too melted, put it back into the freezer for 5-10 minutes so that it can firm back up.
Repeat each layer until you reach the top of the pan, ending with a layer of ice cream.
Freeze until hard.
Once the cake is completely set, remove it from the freezer and run warm water over the sides and bottom of the pan. Release the spring and take off the side of the pan – if it doesn’t come off easily, continue running warm water over it.
Once the pan side has been removed, flip the cake onto a plate or cake circle and remove the bottom of the pan.
Refreeze for a few minutes to set the ice cream which will be a bit melty from the warm water.
Using whipped cream, frost the cake and decorate however you want! Add bite-sized brownies or cookies, drizzle chocolate and caramel sauce, or just add sprinkles!
Place back into the freezer until about 10 minutes before you plan on serving the cake. This will allow it to thaw a bit to make cutting easier.

Fudge Brownie Ice Cream Cake
An easy homemade ice cream cake
Ingredients
- 1 Package Fudge Brownie mix
- 2 1/2 Gallon Ice Cream
- 1 Package Oreos
- Chocolate Sundae Syrup
- Cool Whip or Buttercream
Instructions
- Make fudge brownies according to package.
- Let cool completely.
- Press a layer of ice cream into the bottom of the 10" Springform cake pan.
- Scatter brownie and crushed Oreos across the ice cream
- Zig zag chocolate syrup over the brownie/Oreos
- Repeat each layer until you reach the top of the pan – ending with a final layer of ice cream
- Freeze until hard
- Run warm water over the sides and bottom of the pan until you can release the spring easily
- Flip over and drop the cake onto a plate
- Refreeze
- Frost and decorate as desired – for this 4th of July cake I used star sprinkles, so easy!
- Refreeze until ready to serve

I know! Ice cream cakes are SO expensive! Making one yourself will save you a ton of money – especially if you go on a week where ice cream is BOGO!
