During the cold weather months, I love soups and stews for dinner. Hi, it is Shannah from Just Us Four back again to share a new recipe with you. This chicken chorizo stew has been my absolute favorite go to recipe since the cold weather hit this winter. It is hearty and delicious.
One of the things I love about this stew is how versatile it is. You change the vegetables to suit what you like or what you have on hand. Either way, you’ll end with a delicious meal at the end that warms you through and through. Oh, and you only need one pot too which makes it even better for busy nights!
Chicken Chorizo Stew Ingredients:
2 Tbsp olive oil
2 chicken breasts, cut into 1-inch pieces
16 oz chorizo, sliced
1 onion, sliced
2 medium potatoes, cut into 1-inch pieces
2 medium sweet potatoes, cut into 1-inch pieces
3 garlic cloves, minced
1 tsp smoked paprika
2 bay leaves
4 cups chicken stock
28 oz can of petite diced tomatoes
1 cup broccoli florets
2 cups kale, roughly chopped
Let’s Make It:
- Heat oil over medium heat. Season chicken with salt and pepper. Add chicken to pot and cook for 3-5 minutes. Stir in chorizo and onion and cook for an additional 1-2 minutes.
- Add potatoes through tomatoes. Bring to a boil. Reduce heat to simmer and cook for 10-15 minutes. Add kale and broccoli and cook for an additional 10 minutes.
A friend adds chickpeas to hers towards the end and it is delicious too. We focus on the Paleo lifestyle in our house so I skipped them in this recipe to keep it Paleo.
