Easy English Toffee Ice Cream Pie has become the new go-to dessert in our house. It is a decadently sweet pie that any Chocolate English Toffee Bar lover is sure to enjoy and it is super simple to make! It takes about 5 minutes prep and another 20 minutes freezer time to harden up and then you’re ready to serve. Last minute dinner party? Throw this together quickly and it will be ready by the time dinner is done.

Although you could easily do this with homemade graham cracker crust, I went the easy route and purchased a pre-made crust because sometimes you just want your pie and not any of the hard work that goes with it! My kids and I made it together one afternoon and they couldn’t wait to eat a piece. Poor blogger kids had to wait for it to firm up AND for me to photograph it! Once they got their hands out it, their pieces were devoured in minutes. The rest went back into the freezer. As soon as my husband got home, the kids encouraged him to look in the freezer. They told him he HAD to try it, to which he replied he would take one bite because he didn’t want to ruin his dinner… a few moments later I realized he was STILL having a bite… and another… and another!

INGREDIENTS

Chocolate Graham Cracker Crust
1/2 Gallon Vanilla Ice Cream
3 Chocolate Covered English Toffee Bars (Heath Bar, Skor Bar)
Caramel

DIRECTIONS

Let ice cream sit out and soften for a minute or two. 

While ice cream is softening, put English Toffee Bars into a baggie. Using the back of a spoon, crush bars into a crumble.

Once ice cream is soft, carefully scoop it into pie crust, smoothing it as you go. 

Sprinkle the English Toffee crumble over the top.

Place in the freezer until firm or ready to serve.

Before serving, drizzle with caramel.
