Sometimes annoying nuisances can turn into happy little accidents, such is the case with this Chipotle Bourbon Chicken with Thai Rice Recipe. We eat a lot of chicken. It’s lean meat packed with protein, something we need to support our muscle growth in the gym. Last week we got home from the gym and Todd started up the grill. He marinated chicken breast in Honey Chipotle sauce for about 20 minutes and then popped it on the grill. It’s a standard chicken recipe we do on nights where we don’t feel like making something elaborate.
Unfortunately, we ran out of gas before the chicken was fully cooked. No worries, Todd finished it off in a skillet on the stove top. But being a foodie, of course he had to add a bit more flavor and spice it up a notch. He ended up adding a Sweet Bourbon sauce and some onions and… oh.my.deliciousness. It was moist and tender and so flavorful. I couldn’t wait to dig into my plate! We paired it with some Thai rice and added scallions, though I think some sliced peppers would work well too. When you eat as much chicken as we do, it’s always nice to find a new way to cook it.

Chipotle Bourbon Chicken
Ingredients:
4 skinless, boneless chicken breast fillets
12 oz Honey Chipotle Grilling Sauce
12 oz Sweet Bourbon Marinade
1 Sweet Onion
Veggies of your choice – scallions, green peppers, carrots
Directions:
Marinade chicken breast in Honey Chipotle sauce.
Sear both sides of the chicken on the grill.
Remove from grill and cut into chunks.
Place in a warm skillet, heat on medium.
Add 1 cup Sweet Bourbon sauce and sliced onions (and other veggies).
Cook for about 7-8 minutes.
Thai Rice
Jasmine Rice
Basil
Curry
Crushed Red Pepper
Butter
Follow the directions on the box to cook the Jasmine Rice.
Add in a dash of basil, curry and crushed red pepper and a tab of butter. It’s really to taste. If you like more heat, add more, less heat, use less.
Mix well.
Once the chicken is done, plate it with the Thai Rice and enjoy!
