Chicken Chorizo Chili

Ingredients

  • 2 Tbsp olive oil
  • 2 chicken breasts cut into 1-inch pieces
  • 16 oz chorizo sliced
  • 1 onion sliced
  • 2 medium potatoes cut into 1-inch pieces
  • 2 medium sweet potatoes cut into 1-inch pieces
  • 3 garlic cloves minced
  • 1 tsp smoked paprika
  • 2 bay leaves
  • 4 cups chicken stock
  • 28 oz can of petite diced tomatoes
  • 1 cup broccoli florets
  • 2 cups kale roughly chopped

Instructions

  • Heat oil over medium heat. Season chicken with salt and pepper. Add chicken to pot and cook for 3-5 minutes. Stir in chorizo and onion and cook for an additional 1-2 minutes.
  • Add potatoes through tomatoes. Bring to a boil. Reduce heat to simmer and cook for 10-15 minutes. Add kale and broccoli and cook for an additional 10 minutes.
