Mashed Potato Cupcakes

Ingredients

  • 4-5 Nice sized potatoes
  • Mozzerella Cheese
  • Bacon Bits
  • Sour Cream optional

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • Scrub the potatoes clean and pierce them with a fork. This allows steam to escape and prevents them from exploding in the microwave.
  • Microwave the potatoes on high for 10 minutes.
  • Carefully remove the potatoes from the microwave and peel off the skins. If the skins don’t come off easily, return the potatoes to the microwave for another minute or two.
  • In a large bowl, mash the potatoes until smooth. Add a few drops of milk, a pat of butter, and a generous handful of shredded mozzarella cheese. Fold in the bacon bits until evenly distributed.
  • Line a cupcake tin with cupcake wrappers. Fill each wrapper about 3/4 full with the mashed potato mixture.
  • Top each cupcake with an additional sprinkle of mozzarella cheese and some bacon bits.
  • Bake the mashed potato cupcakes for 12 minutes, or until the cheese is melted and golden brown.
  • Serve with a dollop of sour cream on top.
