Cut large potatoes in half lengthwise
Add a bit of butter and wrap in tin foil
Place wrapped potatoes over the campfire (or on a grill) but not directly in the flame
Rotate every 10 minutes or so
Cook until tender (usually takes about 30-45 minutes)
To test if done: with something to protect your hands, or using tongs, squeeze the potato, if it feels soft and your finger leaves an indentation, it is probably done
Carefully remove from the fire.
Unwrap each potato
Scoop the innards into a mixing bowl, leaving the skins and a small rim of potato intact
Be careful, the potatoes are hot!
Mix a handful or two of mozzarella cheese, bacon bits and a dollop or two of sour cream into the potatoes, mashing as you go
Refill the mixture into each potato skin
Add a topping of cheese and bacon bits
Rewrap the potatoes and place back on the fire for another 10-15 minutes or until cheese is melted and potato is warmed through
