Add 2 eggs to a bowl
Add 6tbs of melted butter
Add Blue Velvet Mix
Stir with fork until all mixed
Note: Blue Velvet batter will be more crumbly and thick and Red Velvet is a thick liquid batter.
For smaller whoopie pies: make 1 inch balls/dollops (make the Blue Velvet a tiny bit bigger than red). Keep all blue pies on one tray and all red on another.
Place in oven and bake until cooked, approximately 8 minutes - you'll know they are down when the tops start to turn brown
NOTE: You may need to flatten red ones gently with a spatula.
To make bigger whoopie pies make the balls/dollops bigger and bake longer.
Cool on wire racks.
