Lemon Cupcake

A delicious lemon cupcake inspired by Girl Scout Cookies!

Ingredients

  • Lemon Box Cake Mix

VANILLA FROSTING

  • 4 cups confection sugar
  • 1/3 cup butter or shortening
  • 1 tsp vanilla
  • 1 tsp milk
  • Yellow Food Coloring

LEMON FROSTING

  • 4 cups confection sugar
  • 1/3 cup butter or shortening
  • 1 tsp lemon juice
  • 1/2 tsp lemon peel
  • Yellow Food Coloring

Instructions

  • Make and bake cake as directed on the box.

VANILLA FROSTING

  • Add confection sugar and butter to a large bowl
  • Beat really well with power mixer
  • Add in vanilla, continuing to beat
  • Add tablespoon of milk while beating, add small drops until you reach your desired thickness
  • Add a drop of yellow food coloring to create a pleasing yellow frosting!

OR FOR LEMON FROSTING

  • Add confection sugar and butter to a large bowl
  • Beat really well with power mixer
  • Add tablespoon of lemon juice while beating, add small drops until you reach your desired thickness
  • Add in 1/2 tsp of lemon peel
  • Add a drop of yellow food coloring to create a pleasing yellow frosting!
  • When cupcakes are cooled frost then sprinkle with confection sugar
