Cajun Beans and Rice

  • 2 cups Minute Rice
  • 2 Tbsp butter
  • 2 cloves garlic minced
  • 1 jalapeno minced
  • 1 onion finely chopped
  • 1 green pepper finely chopped
  • 1 lb smoked sausage sliced
  • 1 can black beans rinsed and drained
  • 1 1/2 cup chicken broth
  • 1 tbsp Cajun seasoning


  • Melt butter in pan over medium heat. Add garlic, onion and bell pepper. Cook for 4-5 minutes or until vegetables begin to soften. Add sausage and cook for 3-4 minutes.
  • Reduce heat to low and add beans, broth and seasoning. Cook for 10 minutes.
  • Stir in rice and cook for an additional 5-10 minutes and most of the liquid is absorbed.


If you are using long grain rice, partially cook it before adding to the pan.
