Chicken Chorizo Chili

- 2 Tbsp olive oil
- 2 chicken breasts cut into 1-inch pieces
- 16 oz chorizo sliced
- 1 onion sliced
- 2 medium potatoes cut into 1-inch pieces
- 2 medium sweet potatoes cut into 1-inch pieces
- 3 garlic cloves minced
- 1 tsp smoked paprika
- 2 bay leaves
- 4 cups chicken stock
- 28 oz can of petite diced tomatoes
- 1 cup broccoli florets
- 2 cups kale roughly chopped
Heat oil over medium heat. Season chicken with salt and pepper. Add chicken to pot and cook for 3-5 minutes. Stir in chorizo and onion and cook for an additional 1-2 minutes.
Add potatoes through tomatoes. Bring to a boil. Reduce heat to simmer and cook for 10-15 minutes. Add kale and broccoli and cook for an additional 10 minutes.
