With St. Patrick’s Day coming up so soon, I thought it would be a great time to start thinking of what to make for the holiday. While I love celebrate holidays with special foods, I also want things that are easy and don’t require too much clean up. My one pot Irish stew is perfect because you’ll only need to clean one pot at the end and most of the cooking is done in the oven so you can take care of other things around the house.
This Irish stew is the perfect meal for the cold March nights because it is hearty and fills you up. With potatoes, onions and carrots with a rich broth, this is a meal your family will beg for even when it isn’t March!
One Pot Irish Stew
- 2 lbs potatoes peeled and cut into ½ inch pieces
- 4-5 carrots peeled, cut into 1/2-inch pieces
- 1 cup onion roughly chopped
- 2 Tbsp ghee or butter
- 2 lbs stew beef cut into 1-inch pieces
- 3 garlic cloves minced
- 1 1/2 cups beef broth
- 1 cup red wine
- 1 bottle Guinness
- 2 Tbsp tomato paste
- 1 Tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- salt and pepper to taste
- Preheat oven to 275 degrees.
- Pat the stew beef pieces dry with a paper towel. Season with salt and pepper.
- In a large, oven safe pot with a lid, heat ghee over medium heat. Working in batches if necessary, brown the beef pieces, being careful not to overcrowd the pan. Add garlic and cook for one minute.
- Stir in ½ cup of beef broth, scraping the pan to remove bits from the bottom. Bring to a simmer
- and add thyme, rosemary and bay leaves. Stir in tomato paste and Worcestershire sauce.
- Add vegetables, remaining beef broth, red wine and Guinness to the pot. Cover and transfer to
- preheated oven. Cook in oven for 2 hours. Season with salt and pepper. Skim the fat from the
- stew, if needed, before serving.
I actually make this recipe two ways: one with the potatoes and then again without them. When I left out the potatoes, I served the stew over an Irish Colcannon for a wonderful combination of two classic Irish dishes.
