Hi all! Laura from Pink Cake Plate here. Are you all ready for Thanksgiving? Can you believe it is a week away?? Looking for a sweet treat other than Pumpkin Pie? How about a Pumpkin Pie Cake with Cream Cheese Frosting?? This cake is out of this world moist and delicious!! I could eat the whole thing all by myself!! That is how good it is!!I love the rustic look of this cake. I baked it in a 10 inch round cake pan with a removable bottom but you can use 2~9 inch cake pans and have 2 layers. I think I was being lazy!! This one recipe I will be making again and again!! So yummy!!
- 1 package Yellow Cake Mix
- 3 large eggs
- 1 cup water
- 1 cup canned pumpkin
- 1 Tablespoon pumpkin pie spice
- In a large bowl or stand mixer, combine cake mix, eggs, water, pumpkin and pumpkin pie spice; beat on low for 30 seconds. Beat on medium for 2 minutes. Pour into two well-greased and floured 9" round cake pans. Bake at 375 degrees F, for 25-30 minutes or until toothpick inserted near the center comes out clean. Allow to cool for 10 minuets before removing from pan, cool completely on wire racks before frosting.

You can even add 1/2 teaspoon cinnamon to the frosting!
To garnish the cake frost with the Cream Cheese Frosting then sprinkle with 1/2 cup chopped pecans or walnuts then to put it over the top drizzle caramel sauce over the cake!!!
