In the summer months you should take advantage of all the fresh produce and an appetite for salads. But how do you make a salad into a meal that all the family will love? Below are four salad recipes to turn a salad into a light but filling meal.
1. Add Cheese
Ok I’m a cheese-o-holic. In my opinion anything with cheese is delicious! Whether is it feta, ricotta, cheddar or even grilled haloumi, it will give a boring salad a lift. One of my favorites is a Garden Salad with Feta and Mint.
2. Add a hot element
Mixing hot and cold elements adds texture and turns a salad into more of a meal. I love adding some grilled chicken or beef, you can even add roasted pumpkin cubes. Go ahead and give my Lemon & Parsley Chicken with Lentil Salad a try!
3. Use leftovers for a super easy meal
We love to have BBQ chicken for dinner but always have lots of the meat left over. Using leftovers is a great way to get a second meal, and by adding salad elements, fill out the meal. Easy midweek meal with just a little chopping. One of my favorites is Thai Chicken Salad with Light Coconut Dressing.
4. Grab a meat alternative by filling out a salad with grains
My family tends to have a meat free day 1-2 days a week. However, this doesn’t need to be as boring as a bowl of lettuce. Fill up with gorgeous grains with Grain Salad with Yogurt Dressing and Pomegranate. This is by far my favorite salad, and is my most popular recipe on my blog.
