Breakfast is always a hectic time in our house. Typically on weekdays we try to do something quick and easy, while on the weekends we make a bigger breakfast to fuel our workouts. Eggs are almost always in the equation. And since I’m trying to expand my horizons when it comes to food, Todd decided he was going to make me an Italian Style Breakfast Burrito using low carb tortilla shells, eggs and Margherita® Hard Salami. I’ve never really incorporated salami into any of my recipes, so I was happily surprised at how good this tasted straight out of the package! It’s a high quality product that you can find at the deli section of your local grocer. Honestly, I’m super glad we bought two packages because Todd has been cooking it up with onions and peppers and eating it by the bowl, while I’ve been snacking on it with cheese for a mid-afternoon pick-me-up.
My friend was up last weekend, so we decided to make these Italian Style Breakfast Burrito’s. They whip up pretty quickly and are quite filling. She’s a hot sauce lover so she added some sriracha to her burrito. My taste buds are a little bit more sensitive, so I stuck with dipping it into a mild salsa while Todd decided a marinara was what he liked best. I love that we all could add the best flavor profile for our tastes just by changing up the sauce. Another great way to switch up the taste is by using one of the other Margherita dry sausage products like the Genoa Salami, Italian Dry Salami, or even the Thick Sliced Pepperoni!
Ready to try these delicious Italian Style Breakfast Burritos?
You’ll need the following ingredients:
Margherita Hard Salami
Low Carb Wraps
Mozzarella Cheese
Onions
Green Peppers
Eggs (2 per burrito)
Italian Seasoning
Sauce of your choosing
Directions:
Chop up onion and green pepper.
Add to a warm pan with cooking oil.
Cut the hard salami in half.
Add to pan.
While the veggies and salami are sautéing, scramble two eggs and add a couple of pinches of Italian Seasoning.
Add the eggs to a pan and mix in some cheese.
Once the eggs are cooked, add them to the burrito. Layer in the onions and peppers and sprinkle with cheese.
Wrap the burrito.
Place on a warm pan to brown.
Serve with your favorite dipping sauce!
