I don’t know about you, but being a mom of three means my weeknights are BUSY. The kids each have activities throughout the week, plus I hit the gym after work, so it is important to our family to have healthy meals that can be made quickly. These Easy Shepherd’s Pie Cupcakes fit that bill!
They can be made in under 30 minutes, are a great way to sneak some veggies into the kidz’ diets and are inexpensive to make, especially when using Hannaford store brand products. I mentioned previously that I love shopping at Hannaford because of the new My Hannafords Reward program which allows you to earn 2% rewards on the foods you buy most often and receive personalized coupons on the foods and brands you love.
Prior to going grocery shopping, I open the Hannaford app on my phone. There I find personalized coupons that I can virtually “clip” and save in the app. I then head to the store and shop as usual. I will admit to picking out more Hannaford brand products now, since I earn a 2% reward for purchasing them. They have a great selection of fresh meat and deli items, plus produce and other products. Once I’ve done my shopping I head to the checkout where I can either enter my phone number on the card swipe machine, or have the cashier scan the bar code in the app. The system automatically recognizes any products that you virtually clipped coupons for and applies them for you! Your savings will print on your receipt, or you can check your rewards balance for the quarter right inside the app. We all know that every little bit of savings helps, and with the little amount of effort it takes to participate in this program, I’m hooked!
This past weekend I picked up Hannaford store brand products and made super simple Shepherd’s Pie Cupcakes. So how do you make them? Read on for the recipe!
MAKES 24 CUPCAKES
1 pound ground beef
1/2 Cup Hannaford Honey BBQ Sauce
2 Packets Hannaford Loaded Mashed Potatoes
1/2 package Hannaford Frozen Mixed Vegetables
Hannaford Shredded Mozzarella Cheese
Muffin Liners and Tins
Preheat oven to 350 degrees Fahrenheit.
In a pan, brown the ground beef. Mix in the BBQ sauce and vegetables – no need to thaw. Turn heat to warm and prepare the potatoes according to the directions on the package.
Once the potatoes are finished, add liners to the muffin tins. Fill the tin about 1/2-2/3 with the ground beef and top with a spoonful of potatoes. Sprinkle with cheese, if desired.
Bake for 20 minutes, or until heated through.
Made too many cupcakes and don’t want to throw them away? These freeze well! Simply wrap in foil and freeze. Reheat in 350 degree oven for 30 minutes or until heated through.
