Hi! I’m Nikole, busy mother of 4 who loves to bake. I’m a simple baker. For me, the easier the better. These Thin Mint Cupcakes that I’m going to share today were inspired by Thin Mint Girl Scout cookies. My daughter, who is a Girl Scout, was sorting the cookie orders and I thought – “wouldn’t it be great to make that cookie flavor last longer, after they all had been eaten?!” I mean, Thin Mint’s do seem to be a fav of lots of people!
With that thought in mind, we took our favorite cookie flavor and designed a cupcake! We started with the Girl Scout Thin Mint cookie and of course my 8 year old daughter, Melanie, assisted. Don’t be intimidated – I promise this cupcake is easy to bake! It starts with a boxed cake mix so it doesn’t get much easier!
Dark or Milk Chocolate Cake Mix
2 tsp of pure mint extract
Thin Mint Girl Scout Cookies (or other thin mint cookies available in the grocery store)
Chocolate Frosting:
4 cups powdered sugar
3 heaping tbsp cocoa powder
1/3 cup soft butter
1 tsp vanilla
4 tbsp milk
Instructions:
Following directions on the box, mix all cake ingredients
Add in 2 tsp pure mint extract
Line your cupcake pan with cupcake papers
Bake as directed onbox
Chocolate Frosting
In a large bowl combine powdered sugar, cocoa powder and butter
Beat well with electric mixer
Add vanilla and milk and continue to beat until completely mixed
Frosting Cupcakes
In a small bowl, crush some Thin Mint Girl Scout Cookies with the back of a spoon (No cookies, no problem! Add a small dash of mint flavoring to the frosting.)
When cupcakes have cooled, frost and sprinkle with cookie crumble.
