Hi seven thirty three readers! I’m Nikole, mom of 4 with a love of baking! Today I’m going to share with you an easy non-bake refreshing BBQ dessert, Patriotic Strawberry Pie. Best part? We’ll be using common ingredients you most likely already have in your kitchen. And I was super excited to use my new counter mixer that I received for Mother’s Day! It made things so much easier.

- 2 Graham Cracker Pie Crusts
- 1 pkg 6oz Strawberry Jello
- 2 cups Diced Strawberry's
- 1/4 cup Sugar
- 2 pkg 8oz Cool Whip
- 1 pkg 8oz Cream Cheese, softened
- 1 8oz can Crushed Pineapple, drained
- Blue Food Coloring
- Add softened cream cheese and sugar
- Add in drained pineapple and 1/2 of 1 of the Cool Whip containers
- Mix in a few drops of blue dye to turn mixture blue
- Pour 1/2 blue mixture into 1 of the graham cracker crusts
- Add the other half of mixture to other pie crust
- Chill in fridge while making the Jello
- Add 1 1/2 cups boiling water to Jello mix and stir until dissolved
- Add 2 cups ice, stir until melted
- Mix in Strawberry slices
- Chill in fridge until starts to firm, about 5+ minutes
- Spoon the Jello mixture over the blue cream filling, spread evenly over both pies
- Chill for 4 hours or until Jello is fully set
- Top your slices with Cool Whip
- You can easily halve the recipe if you only need to make one pie!
