Hi! Nikole, busy mom of 4 here again with another simple and yummy cupcake! Do you love the savannah smiles Girl Scout cookie? It’s that lemon flavored cookie with a delicious confection sugar coating. I love them and came up with a cupcake version to enjoy that’s very similar in taste and easy to make. Lemon Cupcake
Ingredients
- Lemon Box Cake Mix
VANILLA FROSTING
- 4 cups confection sugar
- 1/3 cup butter or shortening
- 1 tsp vanilla
- 1 tsp milk
- Yellow Food Coloring
LEMON FROSTING
- 4 cups confection sugar
- 1/3 cup butter or shortening
- 1 tsp lemon juice
- 1/2 tsp lemon peel
- Yellow Food Coloring
Instructions
- Make and bake cake as directed on the box.
VANILLA FROSTING
- Add confection sugar and butter to a large bowl
- Beat really well with power mixer
- Add in vanilla, continuing to beat
- Add tablespoon of milk while beating, add small drops until you reach your desired thickness
- Add a drop of yellow food coloring to create a pleasing yellow frosting!
OR FOR LEMON FROSTING
- Add confection sugar and butter to a large bowl
- Beat really well with power mixer
- Add tablespoon of lemon juice while beating, add small drops until you reach your desired thickness
- Add in 1/2 tsp of lemon peel
- Add a drop of yellow food coloring to create a pleasing yellow frosting!
- When cupcakes are cooled frost then sprinkle with confection sugar
