Looking for a super simple appetizer or dinner item? Something most kids and adults will enjoy? Then give these Chicken & Cheese Quesadillas a try! I use a time saving element you can thank me for later: Frozen Pre-Cooked Chicken Strips! This saves prep time and tastes yummy too!
INGREDIENTS:
Flour Tortillas
Sharp Cheddar Cheese, shredded
Frozen Pre-Cooked Chicken Strips
Olive Oil
OPTIONAL:
Chopped Green Peppers
Diced Tomatoes
Diced Onions or Scallions
Sliced Olives
Shredded Lettuce
Salsa
Sour Cream
DIRECTIONS:
Warm your chicken strips over medium heat for 4-5 minutes.
Heat a large frying pan to medium heat. Add about 1/4 teaspoon of olive oil and spread it around the bottom of the pan. Place one flour tortilla into the pan. Flip every 10 seconds until air pockets begin to form.
Leave in pan to allow cheese to fully melt, continuing to turn every 10 seconds (turn heat to low if it is getting too browned).
Cut into wedges and serve with salsa or sour cream.
I love Chicken & Cheese Quesadillas as a quick appetizer, or with rice and corn on the cob! It’s an inexpensive meal and is so yummy and easy. Enjoy!
I’m getting ready to try this! Fyi, the very end of the recipe says every 10 minutes (should be seconds).
This was my first time making quesadillas and they turned out great. Thank you for the simple recipe.
