Summer has arrived and I don’t know about you, but as soon as the weather starts to warm, I begin to crave pasta salad. It’s the perfect side dish for all sorts of things – burgers, chicken, steak. And it’s even better for summer gatherings, even if those are on hold right now. I’m going to share with you a simple Farfalle Pasta Salad recipe that anyone can make, and we’re going to top it with fancy curled scallions, because we can!

Delicious Farfalle Pasta Salad with Mayo and Vinegar

Curling Scallions

Did you curl dandelion stems as a child? If so, then curling scallions for your Farfalle Pasta Salad will feel very familiar! Fill a bowl with ice water. Cut the white stems off the scallions. Slice the scallion length-wise, making long, thin slices. Place into the ice water and watch as they curl up. Remove the curls from the bowl of water and place on a paper towel to dry.

Pasta Salad with Mayo and Vinegar

Ingredients:

3/4 16 oz box Farfalle Pasta
2 medium diced bell peppers
1 tbsp mayo
2 tbsp vinegar
Scallion Curls
Salt – to taste
Pepper – to taste
Italian Seasoning – to taste
Garlic Powder – to taste

Instructions:

  1. Cook pasta according to instructions. Once done, rinse it with cold water, let it sit in coriander for a minute or two to get rid of the extra water;
  2. Add pasta, vegetables, mayo, vinegar, and herbs into a big bowl and mix it well;
  3. Top with a couple of cute curls for a picture-perfect presentation!

Optional: you can also add cucumbers, tomatoes and other favorite veggies for more flavor!

Notes

To create scallion curls, cut the white bottoms off from scallions. Slice length wise down the scallion, creating thin slices. Dowse in ice water until curled. Remove and place on paper towel to remove excess water. Add to salad as a garnish.
