Mashed potatoes, a little milk, butter, mozzarella cheese and real bacon bits all baked into a delicious little Potato Cupcake. YUM!

I’ve been meaning to share this creation with you for a while now and just haven’t gotten around to it.  But that is no more!  This is such a yummy treat to add to your plate as an appetizer or part of the main course and it was totally thought up by my brilliant husband!

Potato Cupcakes Recipe

Ingredients

4-5 nice size potatoes make 12 Tater Stickers

Mozzerella Cheese

Bacon Bits

Sour Cream, optional

Instructions:

Preheat oven to 350 degrees Fahrenheit.

Scrub the potato and prick it with a fork to prevent steam from building up and causing the potato to explode.

Put in microwave for 10 minutes.

Take out and peal off the skin – if it doesn’t come right off, put them back in for another minute or two.

Mash the potatoes in a bowl, adding a few drops of milk, butter, real bacon bits and a handful of mozzarella cheese.

Add cupcake wrappers to a cupcake tin.

Fill about 3/4’s of the way with the mashed potato and then add a layer of cheese.  Sprinkle with bacon bits.

Bake in the oven until the cheese is golden, approximately 12 minutes.

Serve with a dollop of sour cream on top.
