Potato Cupcakes Recipe
Ingredients
4-5 nice size potatoes make 12 Tater Stickers
Mozzerella Cheese
Bacon Bits
Sour Cream, optional
Instructions:
Preheat oven to 350 degrees Fahrenheit.
Scrub the potato and prick it with a fork to prevent steam from building up and causing the potato to explode.
Put in microwave for 10 minutes.
Take out and peal off the skin – if it doesn’t come right off, put them back in for another minute or two.
Mash the potatoes in a bowl, adding a few drops of milk, butter, real bacon bits and a handful of mozzarella cheese.
Add cupcake wrappers to a cupcake tin.
Fill about 3/4’s of the way with the mashed potato and then add a layer of cheese. Sprinkle with bacon bits.
Bake in the oven until the cheese is golden, approximately 12 minutes.
Serve with a dollop of sour cream on top.
We’ve made these several times and our guests always go back for seconds! They have been a hit with the kids as well.

These sound fantastic! I’m really getting fed up of making the same potato side dishes all the time so I’m really eager to give these a go. They look amazing and the recipe sounds great.

The next time I’m stuck for what to do with potatoes, I’ll be trying this one! I have come to the conclusion that I just cannot cook tasty mashed potatoes that are “healthy” so why not throw in a little of all the stuff we doctor the potatoes with anyway? 😉
